Directions:
Preheat your oven to 350 degrees (180 degree Celsius, or gas mark 4), . Line 2 large cookie sheets with parchment paper or silicone baking mats.
Using an electric beater, cream together butter and sugar until fluffy.
Whisk together egg replacer and water in a small bow. until foamy.
Add egg mixture to butter mixture, along with salt and vanilla extract.
Beat for another minute. Combine flour, chips, and baking powder in a separate dish.
Add to butter mixture, and mix until combined. If the dough is too dry, and some milk until it is more manageable. Gently fold in cookie pieces.
Scooping approximately 1/4 cup (75g) of dough, shape 12 large cookies and place them on the prepared sheets. Flatten the dough as much as you want the cookies to be, as they will not spread much during baking.
Bake cookies for 16-18 minutes (though, we had to cook longer as we made them BIG!). You want them to be golden brown. Remove from the oven and let cool until the cookies are firm enough to transfer to a wire rack.
