MEATLESS MONDAYS - Amazing Raw Apple Pie Great for Fruitarians
VeganEra  We thought that we would give Ellen a break for the time being; and re-introduce our other favourite chef here on Vegan Era - Ani Phyo.
Beautiful Ani is an award winning chef and is totally organic, totally vegan, raw and eco; animal friendly. This is an amazing raw dish that will be

great for Christmas; especially those in hot climates (which appears to be most places in today's world).
We have slightly adapted the recipe from the video - but you can use both. REQUIRMENTS; you will need a food processor. The CREW were tossing and turning for a while about purchasing one - but let me tell you; it is well worth it. We use it all the time. ALL THE TIME.

Ingredients:

CRUST
Soak 1 Cup Organic Almonds (overnight)
6 pitted Medjool Dates
Places in blender until all clumps together

APPLE FILLING:
2 Large apples cubed
1 Cup mixed berries
1/2 Cup Diced Pineapple
2 Tablespoon Cinnamon

1 Peeled Orange
1 Medjool Date

TOPPING:
1 Cup Raw Organic Cashews
4 Tablespoon's coconut oil
1/4 Cup water
2 Medjool Dates
1 Teaspoon vanilla bean (sliced and pitted)

Directions:

CRUST -
Place all ingredients into food processor - and blend until banded together.
Place into bowl and pat it down until all smooth and even. Grab your children, nieces or nephews to help (they love it).

FILLING -
Place apples into food processor and belnd for a couple of seconds. You do not want this to be juicy - just slightly shopped up.
Place into separate bowl, add Cinnamon, mixed berries and pineapple.
Place the peeled orange in food processor with date and blend until smooth. That is the orange is blended; the date should thicken it (though if you find it is too watery, place one or two more pitted dates)
Place over the top of apple filling.
Mix together with spoon and place over Crust.
Spread evenly.

TOPPING -
Place cashews, coconut oil, dates and vanilla bean in blender.
Blend (this may take a little while) - and you may need to add water as you go.
This is to be thick - not runny; though enough to spread over the top.
Spread on top.
