Raspberry Ganache Fudge Cake
VeganEra  We have the wonderful and very talented Raw Chef Ani Phyo back with an amazing dessert....just in case you still had some room left after the scrumptious vegan festive season.
Ani is also holding cooking classes in Thailand this year, so if you are lucky enough to be in the neighbourhood - you should do your best to attend.

Imagine being able to whip up all of these wonderful meals, plus much more with ease and grace.....Actually, you might have all the Vegan Era CREW over every night enjoying your cooking too!

Ingredients:

CAKE
2 Cups Dry Walnuts
2/3 Cups Cocao Powder
¼ Teaspoon Sea Salt
1 Cup Medjool Dates

FROSTING
1/3 Cup Semi-Soft Dates
¼ Cup Agave Syrup
½ Cup Avocado
1/3 Cup Cacao Powder

FILLING
½ Cup Raspberries

Directions:

CAKE
For the cake, put all the dry ingredients into a food processor and blend together.
Add the dates, and this will bind the mixture together. What you are looking for is a firm dough like consistency, that is moist and easy to manage.
You can then form this mixture into any shape you like - though for today's purpose get yourself a 9" in loaf pan and pack it tight.
TIP - Make sure you have a layer of plastic covering the pan. Because once you pack it - you will flip it out onto tray and finish it off with a layer of the yummi frosting.

FROSTING:
Simple - add all the ingrediants into the food processor and off you go. How simple is that.
Add one layer of frosting then one layer of Filling.

Once this is complete - flip out and PRESTO! you are done.
