Pineapple Cucumber Salad
     Enjoy the sweet and savory flavors of the Hawaiian islands!
VeganEra  Pineapple has a vibrant and juicy flavor, and beholds powerful anti-inflammatory properties (bromelain). Cucumber promotes a radiant complexion and a heart-healthy lifestyle, and is a refreshing food rich in vitamin C, caffeic acid, silica, potassium, and magnesium. I love to eat this salad outdoors as a side dish,
on top of a veggie burger, or rolled into a pita with crisp romaine. This delicious dish makes an excellent compliment to any summer soiree.

Ingredients: *Always Use Organic*

3 cups fresh organic pineapple (chopped)
2 organic seedless cucumbers (peeled and sliced)
2 green onions (sliced julienne)
1/4 cup roughly chopped mint
1/4 cup fresh squeezed lime juice

What You'll Need:

large glass bowl


Directions:

In a large glass bowl, toss ingredients and chill for 5 minutes before serving. Eat and enjoy!
