Compassionate Cook Book II; which will be out very, very shortly. It has taken us a little time, but we want to make sure that you will Love all the dishes as much as we have had preparing them
- ENJOY!
Ingredients:
2 Cups cauliflower
1 Medium carrot, diced
1 Tomatoe
6 Sundried Tomatoes
1/2 Avocado
1/2 Onion, chopped
1 cm piece of ginger
1/2 Tsp Cayenne Pepper
1/2 Tsp Paprika
1 Tbsp Curry Powder
1/2 Cup dried coconut
1 Tbsp Flaxseed Oil
Water (add a small amount at start - 1/8 Cup)
|
|
|
Directions:
As with all our RAW recipes, there is not much to them. All you really have to do is put all the ingredients into a food processor and start it up.
Do watch out for the consistency of the curry - you do not want it to be too wet, just add enough water so that it can blend.
And don't worry if everything is not blended fine - it is sort of exciting to bite into a sundried tomatoe - it's like an unexpected burst of flavour. Exciting!
As an extra note - after you dish up the curry, and serve with a topping of fresh diced tomatoes, cucumber and sprouts.
You can add another 2 cups of cauliflower and blend - this will give you a 'rice' type consistency and add to your dish. Try it out.
ENJOY!
