Welcome to the Ellen weekly cooking special. I know, this is the second one this week - but we get so excited that we just want to share them with you straight away. Next time we will be patient....Unless you don't want us to be - then of course we will bring them all to you.
This week Ellen brings you
Chef Roberto Martin and his awesome Vegan Tacos. Enjoy!
Ingredients:
1 package Yves Meatless Taco Stuffers or other meat substitute
1 can refried beans.
Salsa:
1 cup chopped tomatoes
1/4 cup minced red onion
1/2 bunch chopped cilantro
Onion powder
garlic powder
cumin
lime juice, &
kosher salt - To taste
Guacamole:
2 small avacados- Scooped
Onion powder
garlic powder
cumin
lime juice
kosher salt - To taste
Daiya Vegan Cheese (Can be found at Whole Foods and other health food stores)
Vegan Sour Cream
Directions:
Bring the meat substitute to simmer with 1/2 cup of water.
Heatrefried beans in saucepan.
For the Salsa, add the onion to heated pan and brown slightly. Add all spices and tomatoes and simmer.
Add all guacamole ingredients to food processor and mix well.
Heat the tortilla over heat - and combine all the ingredients. How simple and yummi!
