Auntie Mummy Week
Vegan Era  Hallo hallo hallo....Today is my last day of "Aunty Mummie" as my single mother sister is back from her holiday break away! Wow! I have talked about hats off before to all the parents of the world, with an extra bow for those doing it solo like my sis!! Her children are absolutely wonderful angels and I am exhausted! It was a nice experience and I will miss their antics, but I still feel happily detached from motherhood!
I was a successful vegan "Aunty Mummie" and it was pretty easy, considering the 5 year old is fussy and the 12 year old would lick the dog bowl clean! I did a big shop in our fantastic vegan shop in Brisbane called
"The GreenEdge" (http://www.greenedgeonline.com.au/)
Here are some great ideas for kids meals that worked in my house this past 8 days...
GE is abbreviated for my purchases at The Green Edge this week!

Breakfasts:
- Avocado mash with lemon and pepper on toast
- Lightly peppered fried tomatoes with olive oil and sprinkled basil from our garden
- Mashed banana with dribbled maple syrup on toast

Lunch boxes:
- Home cooked vegan "Lemon Poppy seed" muffins out of a cheat box (GE)
- Frozen smoothies (juice, blended organic fruits, teaspoon flax seed oil in drink bottles)
- Vege ham (GE) sandwiches with nutelex, tomato sauce and thin layer of soy mayonaise (GE)
- Vegan ginger cookies (GE)
- Organic fruits

Dinners:

- Bean nachos: avocado, corn chips, salsa with soy sour cream (GE) ((Refried beans from Coles/WWorths)
- Pizza with favourite kids toppings and vegan cheese - Cheezly (GE) and sprinkled herbs from our garden
- Indian curry/chapatis from my blog last week - DEVOURED by all, even the fussy one!

When in doubt, the 5 year old fuss pot ate raw organic fruits in the evening! This was my compromise for keeping dinner time a happy time!

Her line of the week was
"I know everything, just not some things!"

Such wise words of wisdom little girls have!!
Nap time now...for me that is...phew!
